Fiber One S’Mores Bars

That hubby of mine sure has some good (make it great) ideas! Here’s his for some healthy, belly-filling, poop-inducing, s’more squares.

Okay so they won’t make ya go, but they’re a lot better for you than their Rice Crispy counterparts. Just don’t make them after two glasses of pinot because then you’ll eat the other half of the mini-marshmallow bag before the chocolate is even done melting.


  • 2/3 box Fiber One Honey Clusters
  • 2/3 bag mini-marshmallows
  • 1/4 bag semi-sweet chocolate chips
  • 1/2 cup I Can’t Believe It’s Not Butter spread


1.) Melt the butter and marshmallows in a non-stick sauce pan over medium heat, stirring constantly.


2.) Add chocolate chips, keep stirring!



3.) Once melted, remove from heat and stir in cereal.



4.) When all is well combined it will be hard to mix so move fast. I never have grease to grease a pan with, so I lined a 9×9 baking tin with wax paper and dropped in the mix.



5.) Like I said, it starts getting really hard to work with so try not to be fat like me and eat the marshmallows off the spoon before you press it into the pan.



6.) Let set for one hour, cut into squares and store in plastic bags.
