After a heavy 5 days of dealing with some pretty dark matter, I feel like ending the week with something light. Let us go out on a rainbow. It just feels right.
Here are a few of my favorite rainbow recipes from around the web. I have tried all of them on my own (except #5) and either no photos were taken or my photos didn’t look as lovely as the ones you’ll find below. Either way, I’m excited to share some fellow bloggers’ beautiful and colorful baking creations. How I admire them so. Like rainbows.
My son’s physical therapist shared a photo of these made by her sister-in-law and obvious Pinterest champ. I tried my hand at these this morning using a “waffle version” of my banana & flaxseed pancake recipe and a waffle iron from 2010 still spanking new in its box. I did not quite understand how to make even bands of color (maybe I should have read the directions first) but they tasted delicious and the kids love love loved them! No seriously. This is a thing. My daughter (who just so happens to be obsessed with poop jokes right now because, y’know, she’s 5) and I have made these a few times. They take a little extra work but always bring on the smiles. How mean how can you not smile? It’s cookies that look like unicorn poop! When Bake for Equality was in action, Wifey B and I used to make a LOT of rainbow themed cupcakes. My personal favorite was the tower of disco dust covered rainbow cupcakes we made for a drag show art thing in Denver. The only thing sparklier than our tower of cupcakes was the drag queens themselves. For whatever reason we never thought to make actual rainbows in the batter! It’s brilliant! I even made a gluten-free version with mayonnaise (yes mayonnaise who knew?) and for whatever magical reason the colors don’t mix. They just don’t. I’m woman enough to admit I totally judge a book by its cover, a blog by its images, and a recipe by its ratings. This 4.5 star rated recipe is from a handsomely bearded baker named Macheesmo (WHO I JUST FOUND OUT IS ALSO IN DENVER!!!! *GASP*) on TableSpoon.com. I can’t wait to try this recipe myself as it aesthetically appears to be the perfect union of rainbows and cheesecake; two of my favorite things.
